1 tbsp. olive oil
1 green pepper
1 red pepper
400g frying steak
2 red onions
2 tbsp. Cajun spice mix
100g white rice
1/2 stock cube
1 tbsp. tomato puree
Slice the peppers
Slice the Steak into long strips
Chop the onions into generous slices.
Bring the rice to the boil with half a stock cube and cook according to taste
Heat the olive oil in a large pan over medium heat and add the peppers and fry until brown.
Remove veg from the pan, add the steak and fry for a couple of minutes or until it is cooked.
Just like you would do with fajitas, add the vegetables back to the pan and mix through with the steak.
Add the Cajun spice and mix through and cook for a further minute.
Once the rice has cooked, drain it then add it to pan with the meat and vegetables along with the tomato puree and cook, stirring for about a minute.
Put on a plate or in a bowl
